I use my grill a lot more than most people do when it comes to vegetables. It started because I didn’t want to heat up the oven in the summer, and somewhere along the way it just became my default. There’s something about the char and the smokiness that makes even the most basic vegetables worth eating, and it takes way less time than roasting.

The problem is that not every vegetable grills the same way. Some need high heat and just a couple of minutes, some do better wrapped in foil, and some fall apart if you’re not careful about how you cut them. I put this list together because I kept having to think through the same questions every time I fired up the grill.

17 of My Best Grilled Veggie Recipes

These are 17 grilled veggie recipes that cover the full range of what’s worth throwing on the grill, including corn, zucchini, asparagus, onions, cabbage, romaine, potatoes, veggie kabobs, and a mixed grilled vegetable recipe when you want to use up whatever you have. If you’re trying to figure out how to grill vegetables or just looking for some easy grilled vegetable ideas to add to your summer rotation, this is a good place to start.

Tips for Grilling Vegetables

  1. Cut veggies into shapes and sizes that expose more surface area to the grill. This will help with even grilling. So instead of cutting onions, eggplant, and zucchini into chunks, cut them into strips or rounds.
  2. Mix up textures for a more satisfying bite if using vegetables in kebabs! I like to pair soft vegetables like mushrooms and tomatoes with harder veggies like bell peppers and onions.
  3. Pre-cook hardier vegetables. Some produce, like asparagus, can benefit from a quick 3 min parboil before grilling, making them quicker to grill with a softer texture.
  4. Toss the vegetables with olive oil, avocado oil, or coconut oil. Even if you’re after simple grilled vegetables, I highly recommend this not so much for the flavor but to prevent veggies from drying out and sticking to the grill.
  5. Keep the smaller vegetables in check by piercing them on a skewer. Baby tomatoes, zucchini slices, and mushrooms are delicious candidates for the grill but keep them from falling through the grates by using skewers or a grill basket.

“This is a great way to grill zucchini. We’ve always added a little olive oil to the butter, garlic, parsley mixture. I just cut the zucchini in half and lightly score it, then rub the butter mixture into it and grill,” says reviewer Jillian. “The grill marks come out nice. After it’s off the grill sprinkle with parmesan and let it melt. If you put parmesan on during grilling it gets messy and may burn. If you want to avoid all that just put it all in a foil packet.”
